Why does the weekends fly by and the week days creep by? I was not looking forward to today because I never look forward to Mondays. I had a pretty good weekend. I got 9 miles done, got to spend a couple of hours with my best friend, and watched Date Night with my sister.
The hubs birthday is tomorrow and we celebrated this weekend by eating steak and baked potatoes Saturday night and yesterday I made chicken pot pie and a chocolate cake with cocoa cola icing.
Here's the receipe for Coca Cola Icing for those that want to try it (it's awesome, so give it a whirl)
1 stick of butter
3 tablespoons of coco powder
6 tablespoons of coca cola
1 box of powder sugar
1 tsp. of vanilla
Melt the butter along with the coco powder and coke in a small sauce pan until it bubbles. Pull off the heat and add the vanilla and pour over the powdered sugar. Mix until it becomes smooth. I put mine in the refrigator until it stiffens to put on cake or cupcakes.
This weeks schedule looks a little like this:
Monday - 5 miles
Tuesday - spin/abs class
Wednesday - 5 miles
Thursday - 4 miles/abs class
Saturday - 4 miles
Sunday - REST
I haven't done my 5 miles for today just yet. When the alarm went off at 6 it was raining outside, so I just curled back up and snoozed until my alarm went back off 50 minutes later. I'm planning on getting the miles in this afternoon. I would like to run on the local 5k course anywho and this will give me a chance to run over there and get the miles in. We shall see.
